Easy Homemade Chicken Noodle Soup
Who doesn't love a good chicken noodle soup? Even though flu season has ended, cold weather persists and allergies abound!
Recipe:
Bones, skin, and 1/2 cup of meat from rotisserie chicken
1/2 an onion
4 cloves of garlic
3 C. Carrots, chopped
3 Stalks of Celery, chopped
1 or 2 large handfuls of noodles (I used Chinese soup noodles)
2 Star of Anise (optional)
1 Tbs. basil
1/2 t. Red Pepper Flakes (optional)
Salt and pepper to taste
1. In large sauce pan, saute garlic and onion until caramelized
2. Add 6-8 C. water, bones and skin of rotisserie chicken and spices
3. Partially cover and simmer for an hour (if possible)
4. Remove bones and skin
5. Add carrots, celery, meat, and noodles
6. Simmer until noodles are done and serve
